Running Bread

Whether to fuel high-energy pursuits or simply a family on the run, this quick (and easy) bread provides lots of go!

For a healthier option, substitute the amount of regular chocolate chips called for in a recipe with 1/2 of that amount in mini chocolate chips. The chips will be more distributed so you won’t miss the extra!

Ingredients:

3 ripe bananas
1/2 cup chunky peanut butter
2 Tbs. applesauce
1/2 cup brown sugar (or Sucanat)
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup water
2 cups whole grain flour
2 Tbs. buttermilk powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup mini chocolate chips

Directions:

Preheat oven to 350 degrees F. Spray a 9-inch loaf pan with olive oil or cooking spray.

In a food processor, or using a mixer, cream bananas.  Add peanut butter, applesauce, and sugar, processing until creamy.  Process eggs and vanilla until combined.  Add water and pulse.

Add in flour, buttermilk powder, baking powder, baking soda, and salt, processing until just combined.  Stir in chocolate chips.

Pour batter into prepared pan and bake for 60 minutes.

Cool for 20 minutes before removing from pan.  Transfer to wire rack to cool.
